I am not a baker, but I have an announcement. The other day I made the best cookies I have maybe ever eaten! That is saying a lot since I grew up with home made cookies.
When a friend sent me a recipe for gluten free carrot cake (and I love carrot cake!), I was inspired to make it, but then realized cookies would be so much better. So, I concocted my own recipe that is gluten free, no refined sugar, and loaded with all healthful ingredients. These cookies, in fact, would be fantastic for breakfast! They are chock full of so much flavor, nutrients, and fiber – and oh, so satisfying. More like an energy bar, in fact, than cookies, they are moist and chewy. And did I say, no added sugar! Dates are the wonder ingredient that adds natural sweetness and fiber, and you can adjust to satisfy your own sweet tooth by the number of dates you add. I include the least number of dates, which is just right for my taste buds.
